Chia Seed Pudding by PAGEFIFTYFIVE

I have recently become obsessed with chia seed pudding. Like...have it everyday and think about it every night kind of obsessed. It's so good and the benefits are absurd. (I'm no doctor, so don't quote me on any of this...but here's an article that gives some great info about what these little magical seeds do for us!)

1. Pour 1.5 cups of coconut and almond milk mixture into a glass mason jar (you can use any milk or milk substitute you want).
2. Stir in 6 tablespoons of chia seeds, 1 T maple syrup, 1 t of vanilla and as much lemon zest as you want (the more the better for me!), place the lid on and shake.
3. Put the mixture into the fridge and let it set for a 1/2 hour or so. Shake again and make sure there are no clumps.
4. Periodically shake it up as the chia seeds start to expand. If the mixture seems too liquidy, add more chia seeds, but this ratio works well for me.
5. Let it set overnight.
6. In the morning, it will be ready to eat! I add about 3 spoonfuls of chia seed pudding to yogurt (flavored or regular), oatmeal, granola, fruit (and usually a combination of all of the above) or literally anything you can imagine. You can add more sweetener to it after serving with the flavored yogurt, or add a little syrup, lemon curd or honey as you deem fit. It's delicious and so filling!
